Ingredients:-
Brijal 5 pieces , 100 gm nuts, Oil ,water, Red chillies ,Coriander leaves ,lemon 1 pieces juice, Garlic paste 1/2 cup, Ginger paste 1/2 cup, chopped Onions 1cup, Coconut paste 1 cup, cumin seed 1 table spoon ,clove 1/2 table spoon, Salt as per requirements,Tumeric powder 1table spoon, chopped Tomatoes 1 cup.Cinnamon 1 table spoon ,Cardamom 1 table spoon ,Hing , Split Green chillies, Tamarind paste,Mustard seeds
How to make the recipes
Take pan put it on oven heat it up with low heat. Add nuts, red chillies, Cardamom ,Cinnamon, Coriander , Cloves, toss it for few minutes .add grated coconuts fry it untill it turns aromatic. Take brinjal cut it in x shapes keeps it in salty water for few minute. Cool the mix and bring it to in blender a bit of salt lemon juice or Tamarind paste .mix it well to a fine powder taste it .if required add more chillies powder ,lemon juice or Tamarind juice. Remove the brinjals from salty water and stuff the ground powder. Now frying pan put it on oven heat it up pour some oil in pan add hing, splutter mustard,cumin curry leaves,add onions slits green chillies fry untill it turns golden .Add girger garlic paste fry it untill raw smell goes away. Chopped Tomatoes can be added a bit of salt, turmeric ,chillie powder if needed. Stir it well . Saute the tomatoes untill it turn mushy mix it with onions .add stuff brinjal saute them for 2 or 3 minutes add water to make gravy .cover it with lid for 10 to 15 minutes stir it occasionally .while brinjals are submerged completely skin of brinjal looks loose and soft that mean it cooked .Now taste the curry if require add a bit of salt and coriander leaves. Remove it from oven Let't it cool .serve with rice or bread .
